It is still rainy season, so I'm looking for recipes that could make us feel warmer. After looking around I found 2 recipes from detik that teases me to try this recipe and Mie kuah Ebi Ayam (Ebi chicken noodle soup), I'll blog this recipe too.
Ingredients :
- 500 gr (fresh) Hokkian Noodle - blanch in hot water or boil
Soup ingredients :
- 2 Tbsp oil
- 2 large cloves garlic - crushed with garlic press
- 3 cloves shallots - finely chopped
- 100 gr shrimps, remove the shell
- 1 Tbsp Ebi (dried small shrimps)
- 750 ml water
- 3 Tbsp oyster sauce
- 2 Tbsp kecap manis (Indonesia sweet soy sauce)
- 1 Tbsp soy sauce
- 75 gr Bok Choy or Cai Sim ora any green veggie you want to add to the noodle, cut into pieces
- 5- 7 chili paddies, sliced
- 1 tsp salt
- 2 Tbsp tapioca starch, dissolve with a little bit of water
- Jeruk sambal / limo / (Citrus amblycarpa / Citrus limonellus), half
- 2 Medium boiled egg (4 - 4 1/2 minutes boil, count after the water boils - place egg since the beginning)
- Heat oil in medium heat, add garlic and shallots until it changes color and fragrant
- Add shrimp and ebi, till the color changes
- Add oyster sauce, kecap manis, soy sauce, salt and water
- Add the dissolved tapioca starch, wait until it boils and thickens, simmer down
- Add Bok Choy and chili paddies, wait until it boils again, turn off the heat.
- Set noodle in personal bowl, slice the boiled egg, put on top of the noodle
- Pour the hot soup
- Sprinkle with deep fried sliced shallots
- Add the half Jeruk sambal / limo
