As promised before, I will blog too the next noodle recipe I found to make us feel warmer in this rainy season which I have tried making.
Ingredients :
- 500 gr fresh noodle (I chose the fine ones) - blanch in boiling water or boil it
- sprinkle of Sesame oil
Soup ingredients :
- 1 Tbsp oil
- 1 Tbsp Sesame oil
- 2 large cloves garlic - crushed with garlic press
- 100 gr chicken, finely chopped
- 1 Tbsp Ebi (dried small shrimps), blanch in hot water until soft, drain and finely chopped
- 500 ml chicken stock
- 1 Tbsp ground red chili
- 3 Tbsp soy sauce
- 1/2 tsp white pepper
- 1 tsp salt
- 10 fish ball
- 1 handful moyashi sprout
- 3 shiitake, sliced
- 75 gr Bok Choy or Cai Sim ora any green veggie you want to add to the noodle, cut into pieces
Condiments on top :
- 1 Tbsp coriander leaves
- 1 Tbsp Ebi, mashed (or I just put in blender), then fry in non stick pan WITHOUT oil till it changes color
- 2 Medium boiled egg (4 - 4 1/2 minutes boil, count after the water boils - place egg since the beginning)
- 2 Tbsp deep fried sliced shallots
How to Make :
- Heat both oil in medium heat, add garlic until it changes color to light yellow and fragrant
- Add chicken and ebi, untill cooked and looks dry
- Add chicken stock
- Add ground red chili, soy sauce, pepper and salt until it boils, simmer down
- Add fish ball, moyashi sprout, shiitake, Bok Choy until fish ball floats, turn off the heat.
- Remove the fish ball, moyashi sprout, shiitake, Bok Choy in a separate bowl from the soup
- Set noodle in personal bowl, sprinkle sesame oil and stir
- Assemble : Slice the boiled egg in half, fish ball, moyashi sprout, shiitake, Bok Choy, on top of the noodle
- Pour the hot soup
- Sprinkle with the condiments
